Peanut Butter Cookie Recipe

You can keep these peanut butter cookies soft by taking them out of the oven two minutes early or leave them in an extra minute or two to make the crunchy.

  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 cup Brown Sugar
  • 1 cup butter melted but not bubbling hot
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 egg preferably extra large
  • 2 1/2 cups all purpose flour


  • Melt the butter. While it's melting, add the vanilla, salt, sugar, brown sugar and peanut butter in a large bowl. Add the warm butter and mix until the peanut butter is melted. Add the egg after the you've mixed in the butter. The mixture should be cool by now. You don't want to start cooking the egg. Add the baking soda to the flour, then add the flour one-half cup at a time. Mix until well blended. Drop the dough on an ungreased baking sheet. Bake at 350° for 8 to 12 minutes depending on how large the cookies are and how soft or crunchy you want them. Let sit on the sheet five minutes before moving them to a cooling rack.
